Ingredients
3 eggs
1 cup brown sugar (lightly packed)
3/4 cup oil
2 tsp baking powder
3 cups flour
1/2 cup sugar
1 tbsp cinnamon
Directions
Crack the eggs into a large bowl and give them a good mix.
Add the brown sugar and oil, and stir until everything is smooth and well combined.
Sprinkle in the baking powder and flour, then mix until a soft dough forms.
Take a small piece of dough and roll it between your palms to make a long pencil shape. Gently shape the dough into one of the vowels.
Gently roll each letter in the cinnamon-sugar mixture to ensure a light, even coating.
Place the cookies on a greased baking sheet and bake at 375°F for 12 to 15 minutes, or until they’re golden brown. (Baking time may vary depending on the size of your letters.)
